~Vegan Agave Oatmeal Cookies~
1 C unbleached flour
1 C whole wheat flour, preferably stone-ground
2 C old-fashioned rolled oats
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1/2 C Earth Balance spread
3/4 C Sucanat
3 tsp Ener-G Egg Replacer and 4 Tbsp warm water
2 tsp pure vanilla extract
1/2 C agave nectar
3 tsp ground cinnamon
1/2 C soy milk
1 1/2 C dried apricots
1 C sunflower seeds
1/2 C pumpkin seeds
1. Preheat oven to 325 degrees F.
2. In a medium-size bowl stir together the flours, oats, baking soda, baking powder and sea salt with a wire whisk
3. Beat the Earth Balance, Sucanat, egg substitute and vanilla until smooth, about 3 minutes
4. Add the agave and cinnamon and beat 1 1/2 minutes more
5. Add half of the dry ingredients and beat until just mixed at low speed
6. Add the soy milk and beat again at low speed until smooth
7. Add the remaining dry ingredients and beat at low speed until just mixed
8. Stir in the apricots and seeds
9. Drop rounded tablespoonfuls onto baking sheets and bake for 11 to 13 minutes
10. Let the cookies cool on the baking sheet for 5 to 7 minutes, then remove cookies from the sheets and let them finish cooling on wire racks
