Jill prefers I call this 'Saltine Cracker Pie' because it is ordinarily made into a pie. But when we entertained some friends during the weekend she made them into little cup cakes, so I called them 'Saltine Cup Cakes'.

By any name they are delicious. Many people find it hard to believe they are made using Saltine Crackers.

Here's how it is done. You will need:
18 Saltine Crackers
1 Cup of Walnuts (chopped)
3 Egg Whites
1 Cup of Sugar
1/2 Teaspoon Cream of Tartar
1 Teaspoon Vanilla.
Roll 18 Saltines until they are crushed fine.
Chop 1 cup of walnuts
Beat 3 egg whites until they peak

Beat 3 egg whites until they peak

Add sugar, cream of tartar, and vanilla then mix.
Add 1 cup of chopped walnuts and the crushed Saltines. Mix.
Preheat oven to 325 degrees F (163 C)
Fold the mix into an 8 inch pie pan (I think that is 20cm). Here we used mini cup cake pans, but this is supposed to be a pie.
Bake in oven (325F/163C) for 40-45 minutes, until top is brown.
Top with chocolate whipped cream and serve.
