The invisible sandwich of Porchetta which Sergey had for breakfast

It seems he’s eating a paper bag with evident pleasure, but actually he’s trying to protect his hands from the juice of real Porchetta.
We bought the sandwich at the food market of San Lorenzo, which was just open.

Porchetta is a savoury and moist boneless pork roast of Italian culinary tradition.
The body of the pig is gutted, deboned, arranged carefully with layers of stuffing, meat, fat, and skin, then rolled, spitted, and roasted, traditionally over wood.
Porchetta is usually stuffed with garlic, rosemary, fennel, or herbs, often wild.

Did you like it Marisa, sergey does and I too. It's delicious and we eat never fat.
Thick slices out of the neck-part hmmmm. Only seen ii in Italy.
