Backlit pictures in such bright sun are always a challenge. I routinely use strong minus compensation and then hope the shadow/highlight adjustment in Photoshop will allow me to bring out some detail. I use the highlight portion of the tool to tone down the overexposed areas. If there's no detail at all I will either clone some in or use an airbrush to give the area some color. Interesting to note that I did not put in those eye highlights. They're simply a reflection from the sun on the comforter.
