Is it soup yet?

Not quite...these are all the ingredients I chopped in my KitchenAid mini food processor, covered with water and simmering for a half hour. (The picture is a bit blurry because the soup was rapidly boiling)

Celestial Potato Soup (My lowfat adaptation and a family favorite)

Recipe By : Jan Morkoski
Serving Size : 6 Preparation Time :0:00

2 medium potatoes, peeled and diced
2 carrots, grated
1 rib celery, chopped
1 turnip, peeled and diced
3 tbsp minced onions
DON'T SEE ANY REASON WHY ALL VEGETABLES
CAN'T BE CUT UP IN FOOD PROCESSOR!
1 tbsp veg.flakes (I subst. fresh parsley)
salt and pepper
3 tbsp butter (don't substitute here!)
2 tbsp flour
1 1/2 cups low fat milk
1 1/2 cups non-fat yogurt (called for sour cream)
bacon bits for garnish

Combine all ingredients through salt and pepper. (Butter, flour, milk and
yogurt will be prepared and added later.)

Cover with water. Simmer 30 minutes.

In a saucepan, melt butter. Stir in flour. Add small amount of liquid from
potato mixture to form paste. Cool and whisk in milk and yogurt.

When vegetables are cooked, mash/puree. (I use a stick blender right in the pot.) Add flour and milk mixture. Don't boil.

Garnish with crumbled bacon and serve.
