A marriage made in heaven – ham and fresh young broad beans, one of my favourite summer dishes!
Put a piece of ham into a roasting tray, add a little water, cover with foil and bake in a 170°C oven
for about an hour per kg plus 30 minutes. Let rest for 10 minutes, remove the rind and slice thickly.
Serve with parsley sauce, made thus: melt a Tbs butter in a saucepan, add 2 Tbs plain flour and cook
for a few minutes, then add whole milk, stirring all the while until you have a nice smooth white sauce.
Season with a little salt, freshly ground black pepper, and add plenty of chopped parsley.
