Making fresh Corn Tortillas for Tacos

Freshly made Tortillas make a huge difference. They are made of masa harina: mixed corn flour, lime and warm water.
They are then formed into a ball and put in the metal press between two sheets of wax paper.
The tortillas are then "baked" on a gas range and are ready to eat in a minute or two.
Once you've eaten them fresh, it's hard to go back to store bought, though those are good too.
Tacos come in many varieties, my favorites are cactus, al pastor which is pork cooked on a spit with pineapple and grilled fish.
