I was looking for a new soup recipe when I came across one for country vegetable soup on the blog of Irish tv chef Donal Skehan.
I like his recipes, they are usually quite practical, and I just love his food photography. So much so, that I'll even overlook the fact that he was in a boy band.
As luck would have it, I had all the ingredients needed to make this delicious winter warming soup.
And my celery-hating son didn't even realise that he had eaten the dreaded vegetable along with carrots, parsnips. leeks, potatoes and onions.
