Part of a reconstruction of a press for the production of olive oil. The olives were first crushed, then put in a sack (which you can see lying under part of the press), then pressure was applied (multiplied by the lever), a fluid that was a mix of water and oily would flow out, which would be kept and with time separates into a watery and an oily part. The oily part was taken away.
