Ah - I spoke to the Chef at River Cottage and he explained the way they cook blackberries (delicious!) they put half the quantity in a pan with sugar and let this liquify a bit, then boil up and cook. Then when done take off heat and tip in the uncooked half - that way you have a bowl of excellent blackberries which hold their shape and taste!

We'll probably have plenty of these where I live, they're regarded as noxious weeds here,
