This IS a type of ginger. I don't know about cooking but I do know that you can eat the roots (once washed) for nausea and vomiting. And I know that you can make ginger candy from the roots. We used to live in the mountains and learned alot of plant lore from the old timers there.

I believe that this is a type of Ginger. Not recommended for use as a substitute for the type for cooking.
