SPECIALTY MUSHROOMS - NATURE'S HIDDEN TREASURE
OYSTER mushrooms are named for their shell-shaped caps and grow in clusters. They have a delicate flavor and velvety texture. Most often a soft gray, but they may also be cream, pink, yellow or blue. It is a good idea to remove the stems; use caps whole or halved; must be cooked, but only briefly; cooking with butter brings out flavor; great alone or in combo with seafood, chicken or veal, in soups and omelets.
ENOKI mushrooms are decorative mini-mushrooms. They consists of long-stemmed, white clusters with button-like caps and are mild in flavor and pleasingly crunchy. It is a god idea to cut each cluster about 1" from bottom, where fused stems begin to separate; serve raw or very lightly cooked; add to salads and sandwiches for appealing crunch; use as a garnish for soups and main dishes.
