Making apple bread tonight, my son who is home on leave right now loves it, so I am spoiling him tonight and making it just for him. Here is the recipe for anyone interested:
4 cups apples, peeled and diced.
1 and 1/2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 and 1/2 cups chopped walnuts
2 cups sugar
2 cups flour
2 eggs
3/4 cup vegetable oil
1 tsp. salt
2 tsps. vanilla

Preheat oven to 350 degrees. Grease and flour two standard sized loaf pans. Whisk together sugar, oil, eggs, spices, salt, baking powder and baking soda in a large mixing bowl. Stir in flour just until it is evenly mixed. Add apples and walnuts. Stir together until well blended. Pour into prepared loaf pans and bake for 55 to 65 minuts, until center is set.
