Tower of maki sushi made of two flavors. Traditional futo maki sushi made of seasoned canned tuna, finely shredded carrots,
fried egg (tamago), shrimp (ebi) flakes, pickled turnip (daikon) all wrapped in lightly vinegared rice and rolled in a seaweed sheet (nori).
The second type is fried egg, watercress and seasoned canned tuna with the same outer wrappings.
The seasoned canned tuna is a concession to the fact that the really traditional grilled freshwater eel (unagi) is not readily available and is relatively expensive.
