Maple Syrup Time

This weekend is "Maple Weekend" where several of the state maple producers hold tours for the public. This is an old time catch bucket that isn't used that much anymore. The new system is to use plastic tubing and vacuum pressure to draw the sap into the collection tanks for processing. Vatorman has an image of this at http://www.pbase.com/vatorman/image/94986279 . For what it's worth, when the sap starts the evaporation process it's about 2% sugar and after it's about 60% sugar.

They had samples of the syrup and it was sweet without any pancakes with it :-)
