Roasted onions

For our Sicilian salad "cotta e cruda" we roasted onions, steamed potatoes and green beans, added fresh tomatoes, capers, Greek olives and romaine lettuce.

Beautiful, like flowers. I make these every few weeks to use in salads; love them.
