Bitter melon

"Momordica charantia," fu gwa, or bitter melon is used in soups and sometimes hollowed and stuffed
with pork. The greener they are, the more bitter! These are an acquired taste, even among Chinese.

I have seen these at Ranch 99 Market, but have never bought them because I didn't know what they were. Now I'm intrigued thanks to your image and may give them a try. Great looking image by the way with these luscious colors and textures.
