Boletus edulis, var. edulis

Olympic National Forest, Washington

Common name is King Bolete or Porcini. It is as tasty as it is handsome. The fruitbodies can be the size of dinner plates, but by then worms have often beat you to them. It is high on everyone's list of the best edible mushrooms in the world, far surpassing in flavor the supermarket criminis and buttons. This subspecies is found on the Coast on the edges of Conifer forests. The variety grandedulis is found mainly in the mountains under pine and tends towards more orangey tones at maturity. Pores start white, but slowly turn more dingy or brownish.
