Khanom chan is one of the very popular Thai desserts. This green layered sweet dessert has a long history and is sold in many places even today. Interestingly many of the ingredients that were traditionally used in the khanom chan recipe have been altered by modern cooks. The pleasant green color and enticing flavor derived from pandan leaf extract is often replaced with gaudy artificial food colors. The mild smell got by adding a few drops of jasmine essence is replaced with stronger smells delivered by factory made vanilla and other essences.
