Turkish Eggplant

After having a similar delicious dish at Cafe Agora in the Buckhead larea of Atlanta, I searched the internet to find something as good and I think I hit the jackpot...just had to add some tomato paste to increase the tomato flavor. http://www.akitcheninistanbul.com/2016/10/aubergine-tomato-sauce-soslu-patlican/

Looks delicious! I had to smile when I looked at the recipe since it was in Turkey that I learned to peel eggplant like that.
