Trying to eat more healthfully!
Wheat free and thoroughly delicious. We were introduced to banana oatmeal pancakes by a friend and were astounded by how yummy they were. Decided to enhance her original just three ingredients with the addition of an egg, chopped walnuts, and blueberries. (Hers had only banana, oatmeal and almond milk, I think.) Also, I left out the egg white (pain in the neck) because I knew it wouldn't be necessary to raise the pancakes. There was enough baking powder in the recipe.
Put all (except walnuts and bluerries) in a blender, milk first, and pulverize. The walnuts can be added for a quick whir at the end of blending. The blueberries are laid on top while the first side is browning.

Amount of blueberries and walnuts is up to you. Defrost them if frozen and set aside to dot on the pancakes after you put them on the griddle.
Makes 8 nice-sized pancakes (two meals for us).
