Imam Bayildi

It's been decades that I've been fascinated by the sound of this dish, which translates as "The Sultan Fainted" and FINALLY having enough eggplants in my garden with which to prepare it, I just put this pot on the stove. It's supposed to cook until it thoroughly collapses and that will take one to two hours of "gentle" cooking, as the recipe directs. Recipe is under the previous photo.
