A friend brought this to a luncheon today and it tasted as good as it looked. Here's her recipe.
Refrigerated Sugar cookie dough for base, baked on pizza stone and cooled on stone.
Topping:
8 oz. cream cheese, 1/4 cup XXX sugar, combined, Add 10 oz tub Cool Whip, spread on cooled baked cookie "pizza", add fruit of choice, e.g. kiwi, banana, strasberries, blueberries.
Make glaze with 1/4 cup orange juice, 1/4 cup sugar, 2 tbsp water, 1 tbsp lemon juice, 1 1/2 tsp cornstarch and dash of salt. Cook until thickened and brush over fruit.
Refrigerate until ready to serve.
