On New Year's Eve,we had forgotten some bottles of beer that we put in the freezer for a quick last-minute chill, so I have had some flat beer waiting in the fridge for a recipe.
Today, I came across "The How to Keep the Family Happy While You Knit Cookbook" that I put together with recipes from members of Compuserve's now defunct Machine Knitting Forum. In it was this recipe, which grabbed my attention because it was made with beer.
I am happy to report that it is one of the easiest recipes I've ever baked and it was a delicious accompaniment to our soup and salad dinner.
Aunt Myrtle's Beer Bread

Preheat oven to 350°. Melt one stick of butter.
Grease a loaf pan (not a small one) and set aside.
Combine 3 cups of self rising flour (or add 1 1/2 tsp salt + 1 1/2 tbsp baking power to plain flour)
with 2 tbsp of sugar and one 12 oz bottle or can of beer.
Mix just until flour disappears. (I don't think you're supposed to overbeat breads like this.)
Pour into loaf pan and drizzle butter over top.
Bake for one hour. Turn out onto a rack to cool down a bit before you munch.
