I was trying to capture the rich brown colour and texture of the beans.

I experimented a lot with lighting - as usual, just a single 550EX, but I used a old milk jug cut in half to soften the flash. I had a lot of troble with DOF, so I needed to push the ISO up more than I would have liked.
