Autumn cooking. I’m enjoying these Thai Rice Noodles so much I had them again today. Easy 15 minute meal. Added to pot: water, a little low sodium V8 juice, Garlic, Black Pepper, Basil, Onions, 2 chopped Baby Peppers, Tomato Slices, Chopped Bok Choi, Mushrooms, Spinach, Blanched Chopped Okra, and brought to boil. Simmered a few minutes. Added Rice noodles and cooked 2 more minutes. Let stand 3 minutes. Added a little left over chopped Lentil Loaf. Delicious, satisfying soup. The garlic has been medicinal.
