This was a quick and easy meal, like everything else I make most of the time. I'll just give the recipe for the fish. The rice and vegetables is just cooked rice fried with mixed frozen vegetables with salt and pepper.


Ingredients



  • Fillet of wild white fish, about 3/4 lbs. Sorry I forgot which kind, but thin fillets cook more easily than thick ones.

  • Olive oil. I use extra virgin for the taste. Who says you can't fry with it? It always works for me.

  • Salt, to taste.

  • Black pepper.

  • An herb or a combination of herbs (tarragon, thyme, chives, or rosemary would serve the purpose).

  • Half a normal-sized lemon.


Recipe


Season the fish. Heat the oil in a pan at medium-high heat. When the pan is moderately hot, fry the fish in it. Don't let the fish stick! I'd rather use more oil and be safe. Frying the fish takes only a 2-3 minutes, but just make sure the fish is tender before quitting. Sometimes it helps to cover the pan for an extra minute or so if the fillet is thicker.
