"Cake Anglais" is a traditional French Christmas cake. It is made like an English pound cake (a pound of flour, a pound of butter, a pound of sugar, and a pound of eggs), but then you also fold in about a pound of dried fruits (2 oz of raisins and 14 ozs of other cut-up dried fruits), which has already been soaked for an hour in a third of a cup of dark rum. Although it tastes pretty good fresh, this cake really tastes distinctive when aged. In a cool place and away from mold (like in a refrigerator) it will keep until Easter, when the last piece is traditionally eaten! I suppose it is the French imitation of the English fruit cake, only much better, in my opinion! I don't know how the French eat this cake, but I suppose my liking of whipped cream is due to the Austrians??
