Sponge Candy

"My favorite food!"
The sponge is made from mostly sugar and baking soda, then covered in chocolate.
It has been somewhat unique to Western New York (Buffalo - Rochester) for generations.
Searching the internet shows that it is called other names in other parts of the world,
so I doubt if anyone knows where it originated.

Called Violet Crumble and Chocolate Coated Honeycomb here in Australia...been a long time favourite here too.
