Thai Dragon, "super chili" and serrano.
The Thai are easy to grow and dry well,
use throughout the year until next growing season
instead of supermarket "crushed red peppers."
Just crush, dried pod and all, to use.
Careful - will burn the eyes (hard to wash off your hands, too).
The "super chili" don't dry very well.
Serranos can be frozen whole in a ziploc bag.
Don't even need to thaw, just slice with sharp knife and add to food.
