When I was a kid, Monday's dinner was often made from the leftovers of the previous day's feast.
Sunday's roast would be diced and turned into rissoles or cottage pie. So, I've decided on a guilt-free
leftover policy for Mondays' PADs. If I've got a shot leftover from the weekend, I'll post it on Monday.
I work late on Mondays which makes if difficult to find time to get out with my camera (although had
I taken it with me to the shop across the road today I would have got a real cute shot of a dog
waiting outside, guarding its owner's shopping trolley).
This was taken while driving through the Cooley mountains yesterday in search of gates. It's the kind
of image that gets captioned 'Rush Hour Ireland'. It looks peaceful, remote, and miles from anywhere.
It is, in fact, one of the few roads in the Cooley peninsula which hasn't seen massive development
in recent years, probably because in runs through bogland and forestry. During the past 20 years, and
especially during the boom years of the Celtic Tiger, houses popped up like mushrooms, even on the
narrowest of country lanes. In many cases they were totally out of character with the rural setting,
pretentious red brick mansions which threatened to turn the countryside into a one huge housing estate.
