I love hot beetroot diced and them turned into mashed potato...we had that for lunch (with corned beef!) at primary school, and it's still something I serve every now and then. Lovely shot Mairead, a wonderful relaxed composition again (bit like your onions!)

Wow, that looks good even though I'm not a beet fan. If I can cook them up with other stuff it isn't so bad. But, these do look terrific. Love the light!
