All my mackerel smacker friends out there know about Fridays in Lent. We are supposed to fast (one meal) and eat no meat. Over the years I have grown to appreciate that this is not a sentence of boring meals. So I hopped over to Kroger to see what I could find in the seafood counter. Sure enough, some catfish filets met my fancy While there, I noticed that asparagus was on sale for $0.88 per pound. That was quite a deal so I got one bunch. I bought them and headed home.
I didn't feel like pan frying the fish, so I looked for a good oven fried catfish recipe on the internet and found several. I have a good recipe for roasted asparagus and for tartar sauce. I also had a bottle of table wine. So everything came together and a great repast was enjoyed. Life is good.
BTW - Ginny is in Oregon to put on a 94th birthday party for her mom. I am pretty sure I can take care of myself until she returns.
