What do you do with all the leftovers when you prepare a giant meal? You figure out stuff to make with them. So, I decided that the tons of mashed potatoes needed to be converted into potato pancakes. Topped with some pulled pork and sides of pico de gallo and sliced yellow tomatoes you end up with a good meal. I decided to see what kind of appetizing photo I could get. I have to admit that is doesn't look all that appetizing. But trust me, it tasted good. I ate the whole thing.
