Have you ever eaten, or even heard of the grain "kamut"? I didn't until I bought some Alpha Omega salad at our local natural foods co-op.
For some reason this salad, which I haven't eaten in years, came to mind and I reminded myself that I had some kamut in a Mason jar in the freezer - for several years, so I thought cooking it in my Instant Pot might revive it, and I was right. Whole grains cook much faster under pressure.
I had this recipe in my collection https://www.outpost.coop/resources/cookbook/salads/recipe/207/alpha-omega-salad/ and had to adjust some ingredients because I didn't have them on hand. Used 1/2 olive oil and 1/2 avocado oil instead of the oils mentioned, red onion, orange pepper, and edamame beans instead of the green peas. I didn't use 3 cups of cooked kamut because that would have been way too much. Two were more than sufficient. I made the vinaigrette as per the recipe.
