Knock it out of the park home run delicious. I made it a little too early for lunch and haven't been able to wait for it to be part of the meal - it's that good.
Note: I did have shrimp paste in the fridge but it was so old it was hardened into a rock, so I didn't put any into the dish - I didn't miss it. I didn't have fresh pineapple so I rehydrated some dried pineapple from Aldi's. (I didn't have a fresh pineapple either, so it went into a bowl. I did follow her suggestion for 1/2 water and 1/2 coconut milk for the rice (I used jasmine). Super good.
