Do you love Vidalia Onions as much as I do?
The side dishes at Green River Barbecue in Saluda, South Carolina are so good I usually get a plate of four of them and forget about the barbecue. One seasonal option is their "Onion Slaw". I decided to do a search for a recipe and came up with this one which is just about perfect. DO NOT try it with a stronger onion!
I halved the amounts the last time I made this and it came out fine:
3 large Vidalia onions (about 3 2/3 pounds)
1/4 cup white vinegar
1/4 cup water
1/4 cup sugar
1/4 cup mayonnaise
1/8 tsp celery seeds
Cut Vidalias in half and cut them into thin slices.
Stir together 1/4 cup vinegar, 1/4 cup water and 1/4 cup sugar, in a large bowl until sugar dissolves.
Add onions, tossing gently. Cover and chill EIGHT hours, stirring occasionally. (Do not add mayonnaise or celery seeds)
Drain onions, discarding marinade. Pat dry and return to bowl.
Stir in mayonnaise (Hellman's) and celery seeds.
