I seem to be one of the few people that does, and when I saw some nice looking okra in the supermarket I picked up just the right amount to make this ADAPTED recipe, which I originally found in the Farm Journal America's Best Vegetable Recipes book.
It called for tender okra about 2" long. These were considerably longer and less tender so they had to be cooked quite a bit longer
3 cups okra, cut into rounds
1/3 cup butter
2 cans Hunts diced tomatoes in sauce
3/4 cup yellow onion slices
2 tsp salt
1/4 tsp pepper
a few splashes of Texas Pete hot sauce
Cook okra and onions in butter until tender.
Add remaining ingredients and simmer gently, covered, five minutes.
Makes six servings.
