First, you must know your fish guy,, he lives, 0.5 KM from me
St Peter's Point - Cape Cod, MA (the top greenish oysters)
Blue Point - Long Island Sound, CN/NY (large bottom right)
Beausoleils - New Brunswick, Canada (brownish ones on the left)

My father was a great fan of eating oysters. He used to get some dozen time to time, and he and the elder son and daughters ate them with delectation, just with a trickle of lemon juice. The young ones we used to watch them with a mix of curiosity and repulsion... and my mother thought it was simply disgusting ! (logical, because she was born in the "inner land" at 3 Km from the coast LOL). BTW, he used to buy (when he found them) Arcachon's oysters. endika

believe or not,... all oysters on the East Coast of the US are the same species, they only look and end up different because of the locality they live in,, (just like every human),,

My wife is looking over my shoulder, drooling as we go through these images. The table top really sets off the texture in the shells. brent
