The Cow Parsnip

This amazing wild plant (Heracleum Lanatum), aka Indian Celery and Indian Rhubarb, dominates the deciduous areas of our local forests. It grows to up to 6 ft. in a matter of a couple of months and goes through so many interesting stages, I find my camera magnetized by it's charm. The young stalks are edible and the taste is reminiscent of celery with a rhubarb like texture.
