Chesapeake Smoked Rockfish
After a great day on the Bay..
Thought I’d send along some ideas for a great way to prepare that Rock for a holiday treat or halftime snack.
Step 1) Catch the Rock
Step 2) Fish cleaning
Simply scale and gut the rock
I remove the Gills also. Wash and clean out the insides to remove all bloodlines etc.
Step 3) Score both sides to allow sugar/brine to soak in
Sugar/Brine Mix:
1 cup of Brown Sugar
1 cup of white sugar
1/2 cup of sea salt or Kosher salt
2 or 3 cups of water
Boil and stir brine/sugar mix until dissolved in a pot
Step 4 ) brine the fish for 6-8 hours or overnight
Lay fish in a pan or dish big enough to cover the fish with water and brine mix.
I found an aluminum roasting pan works great
I pour the hot brine mix over the fish and fill with cold water until covered.
I usually brine only half at a time and I turn the fish after about 4 hours to get brine mix into both sides.
Step 5) Smoking
I use an electric smoker set at 200 degrees for 4 hours
I use hickory and apple chips mixed, but any flavor should work.
Rock will be a beautiful smoky brown and be moist ready to be served.
Found it better if left to cool down or can be wrapped and refrigerated for later.

Steamed Perch - Chinese Style
Perch are easy to steam in fry pan with steamer rack over layer of scallions.
Topped with thin slices of ginger and sesame seeds. Steam till meat is flaky
When done pour heated soy sauce and fish sauce lightly over fish.
Serve with several dipping sauces.
Rated b+... Gotta do better on getting all the scales off.

Chinese Style Steamed Perch
Simple Grilled Striper with Italian Dressing
Great way to use up those fish from last week or last year
I use this recipe for cooking up some fish that I had in the freezer or just some fresh filets, either way it's easy and quick to fix up a batch of striper's that everyone can enjoy.
Ingredients:
Rockfish Filets
Italian Dressing
Lemon juice
Instructions:
Cut filets into easy eating or serving sizes
Marinate fish in the Italian Dressing for about 15 minutes to 1 hour
* Don't marinate over 1 hour.. the fish will get too strong.
Place filets on Grill direct or in aluminum foil for about 2 to 5 minutes
Grill until filets flake apart
Sprinkle with lemon juice and dressing while cooking.
Drizzle flavored butter ( Old Bay or Garlic melted in with butter) over the filets when done.
Note...
I use a Foreman Grill in winter .. works great!
Remove and serve with Baked Potatoe or veggies
* Left over fish (if you have any) can be used in my Striper Salad Recipe!
Easy Fix'n Striper Salad Spread
Great way to use left over Rockfish Filets from the grill or just cooked up for this recipe.
Ingredients:
Grilled Fish Filets or Steamed Whole fish
Miracle Whip
Old Bay or JO Spice
Sweet Pickle Relish
Instructions
Steamed Rockfish or use your left over grilled filets
1 or 2 lbs is usually enough
Pick fish meat off the bones and chunk by hand into a bowl.
Add 1 or teaspoons of Relish to your taste
Add / sprinkle in some Old Bay or JO seasoning to your taste
Add 1/4 cup of Miracle Whip Salad dressing to bowl and mix with meat until a nice chunky spread.
Place on crackers or bread as a snak or sandwich.
Great served onboard as a snak while fishing!
Grilled Rockfish with Mayo Topping
This is one the easiest grilling recipes for Stripers that will impress everyone!
Ingredients
Rockfish Filets
Mayonnaise (use real Mayo for best taste)
Old Bay or Jo Spice
Instructions
Place your filets on oiled or Pam covered aluminum foil
Cover the Filets with a 1/2" of Mayo
Sprinkle with Old Bay or JO seasonings
Grill until filets are flaky and Mayo starts to brown up (8 to 10 minutes)
* I used this one on a professional chef in Annapolis and he thought it was something special! No secrets.. just fresh Rockfish from the Chesapeake!
Steamed Rockfish with Crabs
If you steam your own Maryland Crabs
Just add your Rockfish Filets
Ingredients
Rockfish Filets or whole cleaned Rockfish
Maryland Steamed Crabs
Instructions
Place your Fish or filets in aluminum foil in with your steamed crabs.
I sprinkle my filets with a small amount of Old Bay or JO and add a little butter in with the filets while they steam.
Let fish steam right in with the crabs and pick meat and serve with your steamed crabs
* It don't get much better from the Bay with Crabs and fresh Rockfish from the Chesapeake!

Don't look at Blue Fish as a fish that is not good to eat. Just take the time and do this: Fllet 'em, leave the skin on. Season with garlic powder, season-all and black pepper then SMOKE 'EM skin side down.
Put 'em in the refrigerator for a day because this would make it easier to peel the skin off.
Trim all the red meat from the skin side. Flake 'em up put 'em in a bowl then add chopped up celery, tomatoes, lettuce, pickled relish and mayonnaise. Mix 'em all up, put a spoonful on a cracker and enjoy...mmm good!

Bunn's Fried Perch!
If you fry fish in bacon grease, is it still good for you ?
I solved the question by frying it in olive oil. I used a healthy coating of Texas Pete hot sauce - that helps the Old Bay to stick better.
MMmmmm , health food - lo carbs too.
I once saw a piece on PBS (22) that pictured an Italian lady preparing some little fresh fish ( they looked like sunnies, from the creek ) nice & brown, in olive oil. They were commenting on how the Italian men had low occurrence of heart problems.
