First, make some mashed potatoes and mix in thinly sliced leeks sautéed in butter until soft. Coat haddock or cod in seasoned flour and fry quickly
in hot olive oil until just cooked, then flake coarsely into a buttered dish. Fry raw prawns until just turning pink, and add to the fish. Mix in cooked
frozen peas and nestle in a couple of hard-boiled eggs, cut in half. Pour over some white sauce, made with flour, butter and whole milk, seasoned well,
and cover everything with the mashed potato and leeks. Sprinkle with grated parmesan and bake in a 180°C oven for 25 minutes, until browned on top.
Serve with a green vegetable such as broccoli.
