Sigarilyas / Winged bean

Cigarillas-2008-3c.JPG

I personnaly include this winged-bean vegetable when cooking the "Ginataang Kalabasa at Sitaw" or "Pinakbet" dish.
Like any other bean vegetable one should not forget to de-string the sides first in preparation for cooking.

I believe this word evolved from the Spanish "Cigarillas" because of the long, serrated edges that looks like rolled tabacco leaves
- a popular industry during the Spanish colonial era. The locally grown tabacco at that time surpassed the quality even
of those from Cuba and was highly prized as it was exported back to Europe through the Galleon Trade route.
