Purple Sweet Potato Rhapsody

Okinawa, Japan

Hard to believe, but this color is true-to-life for the beni imo, or Okinawan sweet potato. It appears with beni imo bread, beni imo sesame sweet and beni imo flakes. There's even beni imo ice cream, which is really yummy looking. Heaven for purple lovers like me (and it's delicious).
