I had some pita bread left and decided to make a batch of hummus.
1 clove GARLIC, minced
1 Tbsp. chopped PARSLEY
1/3 c. LEMON JUICE
2 c. canned CHICKPEAS
2 Tbsp. OLIVE OIL, or a little more
1/2 c. TAHINI
1/2 tsp. CUMIN
1/8 tsp. CAYENNE
SALT and PEPPER, to taste
1 Tbsp. PARSLEY (for garnish)
OLIVE OIL, to drizzle on top
CAYENNE or SMOKED SPANISH PAPRIKA to sprinkle on top
Combine all ingredients in a food processor.
I like to present it drizzled with additional olive oil and a sprinkling of cayenne or paprika.
Serve with pita chips or warm pita bread.
