This is a great use for leftover beef stew, is tasty and easy to prepare.
It is kind of like of Yorkshire pudding with beef stew filling.
Batter: gently mix 1 1/2 cups flour, 2 tsp baking powder, 1 tsp salt, 1 1/2 cups milk,
1 TB dried minced onion, 1 TB sugar, and 4 to 8 oz grated Cheddar cheese.
In a heavy casserole, melt 1/4 cup butter (I use grapeseed oil and less butter). Pour in batter. Do not stir.
Place 4 cups (or more) of beef stew on top of batter. DO NOT stir! Bake at 350 for 1 hour.
The batter will rise and form a nice crust around the stew. MMMMM!
Adapted from the cookbook "Applehood and Motherpie."
