roast pork loin with apples (brief recipe and info)

Adapted from "Julia and Jacques Cooking at Home" (Julia Child and Jacques Pepin), pp. 356-7.

Basically, take trimmed pork loin or pork roast, coat with herbs.
(In a pinch, can substitute dried thyme alone for herbes de Provence.)
In heavy ovenproof pot, brown on all sides in butter.
Remove pork. Put unpeeled apple (4 to 5 apples) slices in pot. Season with salt and pepper, and 1 tsp sugar.
Return pork loin to bed of apples in pot. Bake uncovered at 375 F for 1 hour, until internal temperature reaches 150 F.
Remove from oven. Allow to rest for 10 minutes, carve and serve.
