Carnicerías: Butcher shops

WARNING Contains raw, earthy scenes. These scenes were photographed at Carnicería La Norteña, in the Mercado de Pátzcuaro. It's a "slice of life" We like shopping there because of the good humor of Hugo, the Jefe de los Carniceros; Frank, "El Carnicero de Hierro", his right-hand man; as well as the custom cut, custom- ground meats we have bought there. The chuletas ahumadas (smoked porkchops) are especially tender and succulent. El tocino (bacon) is lean and delicious, hand sliced by Águstin or one of his assistants. Ask for whatever thickness you wish, and he will cut it off the slab as you like.
