“Salam d’la Duja” is the name of this speciality of Piedmont region.


This kind vendors and producer explained us that it means “sausage of the jar”.

Actually “Duja” is the name of a big jar of terracotta where this kind of salami get stored, when it’s still fresh and very soft and then covered with melted lard.
When the fat solidifies it becomes a kind of protection for the salami,
which remains softer and preserved from oxidation.
