Toddy is the juice from the coconut tree. When a new shoot or frond appears on a coconut palm
it is bound up with rope so that it can't open and a cut is made in a particular spot.
One end of a piece of palm leaf is placed into the cut and the other end is fed into a bottle
which is suspended under the new shoot. The toddy runs down this piece of leaf into the bottle.
Apparently it takes about 8 hours to fill a 750 ml bottle. Some drink it straight away and say
it's sweet and refreshing while others add a yeast and let it ferment in the bottle and drink it
after it has become alcohol.
